Fill Your Bowls and Bellies with this Superfood Chocolate Yogurt Parfait Breakfast Recipe

For your chocolate-lovers, this recipe is sure to satisfy with a fraction of the unhealthy sugars found in many holiday dishes! Superfood Stuffing

As a staple at Thanksgiving and Christmas, stuffing can easily be transformed into a healthy option everyone will love. Try using quinoa instead of bread. It’s packed with protein, iron, lysine, magnesium, Vitamin B6 and many more vitamins with enough fiber to keep you full. Not to mention quinoa is gluten-free and vegan!

This recipe serves 5-7 people.


  • 2 cups quinoa
  • 4 cups vegetable broth
  • 5 cups small diced sweet potato
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried thyme
  • 2 teaspoons dried sage
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped pecans
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste


Preheat the oven to 400 degrees. Add sweet potatoes, garlic and seasoning ingredients to a large bowl and mix. Evenly distribute onto a baking sheet and roast for about 20 minutes, tossing halfway through. Cook quinoa in vegetable broth for 10-15 minutes, then fluff when most of the liquid has been absorbed. Once the quinoa and sweet potato roast are ready, toss them both together with the apple cider vinegar and fresh rosemary.

Mashed Cauliflower

Mashed potatoes are a family favorite, but here’s a recipe with a twist: try making them with cauliflower instead! Cauliflower contains 77 percent of the daily recommended serving of Vitamin C and plenty of other nutrients without the heavy carbs found in mashed potatoes.

This recipe serves 3-5 people.


  • 1 head cauliflower
  • 3 tablespoons milk of choice
  • 1 tablespoon unsalted butter
  • 2 tablespoons light sour cream
  • 1/4 teaspoon garlic salt
  • Salt and pepper to taste
  • Sprinkle fresh chopped chives


Chop cauliflower into florets then add to a pot with two cups of boiling water. Cover and reduce heat to medium. Cook until tender, about 15-20 minutes. Drain the water, then add remaining ingredients of milk, butter, sour cream and seasoning. Mash with a masher to preferred texture.
